It has been over a year since I started juicing almost daily. I have gotten into a rut as of late and I find myself skipping more days. So to get back on track I will start trying out some new juices like this Pineapple Lemon Juice and play a little game called “How many veggies can I put into juice before the kids won’t drink it.” They will hate this game.
To start off my juicing plan I will use my favorite old standby’s – Carrots and Pineapple. Then add lemon. I have never made juice with lemon in it (I always use oranges). I have a small pile of leftover lemons from my Lemon Sponge Pie so I plan to use them up.
I love carrots in juice. They are inexpensive and they make a great orange color. For this recipe I will use 2 lbs of carrots(approx 12 carrots), 1/2 a fresh pineapple, a couple apples, and a lemon.
Wash and slice all the fruit and veggies. I peel the pineapple and lemon skins off.
Toss the fruit and veggies into juicer and ready a child and a spatula for stirring.
The lemon is a light and crisp change from oranges. Maniac #2 enjoy it quite thoroughly.
This made 5 cups of juice, about 4 serving for us but you can adjust to your desired amount
- ½ fresh pineapple cut into chunks
- 12 carrots cut into chunks
- 1 lemon peeled and cut in half
- 2 apples cut in chunks
- In your juicer process pineapple, carrots, lemon, and apples.
- Stir to combine.
- Pour and enjoy!
