Today we tackled another recipe from our Antique Recipe Collection. We are attempting Chocolate Drop Cookies. The recipe leaves a number of things to be desired. It is only a list of ingredients with no directions and 2 of the ingredients do not list the amounts to use.
We recently succeeded in making Drop Hermit Cookies from this same collection, so going into the Chocolate Drop Cookies I was confident I could use the same procedure.
Chocolate Drop Cookies had another easy list of ingredients almost always on hand.
In the bowl of our stand mixer I start by combining 1/2 cup sugar, 1/2 cup corn syrup, and 1/4 cup softened butter. I used my cat wearing glasses clad maniac #1 to pour the ingredients in for me.
Once the first three ingredients were well combined everything else get put in. 1 egg, 1 1/2 cups flour, 2 teaspoons baking powder, 1/4 cup milk, 1 teaspoon vanilla, 2 tablespoons cocoa powder, 1/4 teaspoon salt, and finally 1 cup of walnuts.
The recipe directions do not state how much cocoa or vanilla to add. A couple tablespoons of cocoa powder looked right once mixed in and a teaspoon of vanilla did the trick.
With everything combined it was time to ready 2 sheet pans lined with silicone mats.
I scoop tablespoon sized globs of the chocolate-y batter onto the pans. I was under the impression these would stay about the same size and puff up but the ended up spreading more then I had thought so you will want to give them some room.
I baked at 350 degrees for 14 minutes and then allowed them to cool completely on the counter.
The finished cookie is a soft and chewy little chocolate bomb with some walnut surprises inside. This was a really easy cookie to whip up. From start to finish you are looking at around 30 minutes including cooling and clean up.
At this point we could have been happy with the day. We crossed another recipe off our Antique Recipe Collection list and it came out great the first time. But we figured out a way to make it better…
We spread some leftover cream cheese frosting on them and made sandwiches out of them.
This turned nice little old time cookies into amazing treats. So good that Spencer ran to hide one in his room at bedtime as he was correctly assuming we would take it away from him.
Next time I will omit the walnuts and make this specifically for the cookie sandwich opportunity!
- ½ cup sugar
- ½ cup corn syrup
- ¼ cup butter, softened
- 1 egg
- 1½ cups flour
- 2 teaspoons baking powder
- ¼ cup milk
- 1 teaspoon vanilla
- 2 tablespoons cocoa powder
- ¼ teaspoon salt
- 1 cup walnuts (optional)
- frosting to make cookie sandwiches (optional)
- Preheat oven to 350 degrees and ready 2 silicone line baking sheets.
- In the bowl of stand mixer with paddle attachment mix sugar, corn syrup and butter thoroughly.
- Then add egg, flour, baking powder, milk, vanilla, cocoa powder, salt , and walnuts while mixing.
- Once combined scoop tablespoon sized amounts of batter and drop onto baking sheet,
- Bake for 14 minutes until done and allow to cool completely before removing from silicone sheets.
- Spread frosting and make sandwiches if desire.
