I like this dinner because it is delicious and Spencer friendly (I rarely get both). He is in that stage where he loves to fight about eating dinner and he is much more picky about what he eats then Norah ever was. I once yelled at him to eat his pizza (I picked the wrong battle that time) but we work really hard to expose them to as many different foods as much as possible hoping to strike a good balance with their nutrition.
Despite the fact that Spencer won’t eat bacon or sausage he will eat these pork chops and we get really wonderful pork chops from a certified organic farm at the Orono Farmers Market. These pork chops were the first locally raised and organic meat that I tried, about 5 years ago, that blew me away the difference from what you get at a grocery store. The difference in taste and flavor is so extreme I have had a hard time even when strapped for time or money settling for grocery store pork.
For the four of us I make 2 large boneless pork chops which is about a pound and they are thick cut. Then I cut them in slices and divide the slices between the four of us. We buy these frozen so they have to thaw overnight in fridge before we cook them.
I start off by making the breading for them. Into a large gallon bag I put 3/4 cup panko bread crumbs, 1 teaspoon kosher salt, 1 teaspoon garlic powder, 1/2 teaspoon black pepper, and a 1/4 teaspoon paprika. Then I pour in a tablespoon olive oil. I will shake and crunch that all together until combined.
Next it is as easy as throwing a chop in and shaking and pressing it into the breading until covered.
I place the chops on a parchment lined baking sheet and transfer to the oven to bake 20-25 minutes at 400 degrees until done.
That is all there is to it. I let them rest for 5 minutes before slicing and serving. Since everyone is getting only about 1/4 pound of meat I like to make a bunch of veggies to go with it like mashed potatoes, peas, and either sauteed onions or lightly boiled carrots. The good new is this recipe will be easy to double in a few years when the maniacs get older and it comes together really quick for a delicious weeknight meal everyone will eat!
- 2 thick cut boneless pork chops (about 1 lb)
- ¾ cup panko bread crumbs
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ¼ teaspoon paprika
- 1 tablespoon olive oil
- Preheat oven to 400 degrees and line a baking sheet with parchment.
- Into a gallon plastic bag place bread crumbs, salt, garlic powder, black pepper, paprika, and olive oil and combine.
- Place each chop into bags and shake and press to coat in breading.
- Place chops on baking sheet and bake in oven for 20 minutes until done.
- Remove from oven and allow to rest 5 minutes before slicing.
